TAVË KOSI- ALBANIA’S GOLDEN LAMB & YOGURT MASTERPIECE
Tavë kosi comes from Elbasan, Albania and is one of the country’s most iconic traditional dishes.
Tavë kosi is Albania in one magnificent dish. Its signature is tender lamb, fragrant rice, and a golden yogurt -and-egg crust baked until irresistible.
Use young, well-marbled lamb and thick full-fat yogurt for the richest flavor. Brown the lamb well and bake until the yogurt topping is deeply golden and slightly puffed.
⭐ THE CLASSIC ALBANIAN TAVË KOSI
Authentic Elbasan-Style Baked Lamb with Yogurt & Rice
Serves: 4–6
Prep: 20 minutes
Cooking: about 1½ hours
🥩 Ingredients:
For the lamb & rice
- 600 g
lamb shoulder, cut into bite-size pieces
- 70 g
short- or medium-grain
rice
- 20 g
butter
- 2 tbsp
olive oil
- 2
garlic cloves, finely chopped
- 2 tsp
dried oregano
- 450 ml
hot water or light lamb stock
- Salt
- Freshly ground black pepper
For the golden yogurt topping
- 750 g thick
full-fat Greek-style yogurt
- 6
medium eggs
- 50 g
butter
- 2 tbsp
plain flour
- Salt
- Black pepper
This follows the characteristic preparation of lamb, rice, garlic, oregano, a butter-flour roux, and an egg-and-yogurt topping found in established Albanian recipes.
🔥 COOKING METHOD:
1) Brown the lamb
Heat the olive oil and 20 g butter in a heavy pan.
Add the lamb and brown it thoroughly for about 5 minutes.
Tip: Do not crowd the pan. Browning creates the deep flavor that makes the finished dish sing.
2) Build the lamb base
Add garlic, oregano, salt and pepper.
Pour in 300 ml hot water or stock. Cover and simmer for about 45–50 minutes, until the lamb becomes tender.
3) Add the rice
Add the remaining 150 ml liquid and the rice.
Simmer for about 8–10 minutes. The rice should be only partially cooked and the mixture should remain moist, not soupy.
4) Make the secret weapon: the roux
Melt 50 g butter.
Whisk in the flour and cook for about 2 minutes.
Do not let it become dark. You want a pale, smooth roux.
5) Make the yogurt topping
Whisk together the yogurt, eggs, salt and pepper.
Slowly whisk in the warm roux until completely smooth.
Best tip: Use room-temperature yogurt and eggs. The topping will blend more smoothly and bake more evenly.
6) Assemble
Transfer the lamb-and-rice mixture to a buttered baking dish.
Pour the yogurt mixture evenly over the top.
7) Bake
Bake at 180°C / 350°F for about 40–45 minutes, until the top rises and develops a beautiful deep golden-brown crust.
For extra color, move it higher in the oven for the final few minutes.
8) Rest
Rest for 5–10 minutes before serving.
The crust will settle slightly while the inside becomes
creamy and spoon-tender.
Cooking Tips to Make it More Delicious
Choose the lamb wisely. Shoulder is ideal because its fat and connective tissue become wonderfully tender during cooking.
Choose thick yogurt. Full-fat, unsweetened yogurt gives the topping body and a richer flavor. Very thin yogurt can make the crust watery.
Brown first, bake later. Never skip browning the lamb. That extra few minutes is cheap insurance against blandness.
Keep the rice slightly undercooked. It finishes cooking in the oven and absorbs the lamb juices.
Don't rush the yogurt. The topping should be thick, smooth and well blended before it goes over the lamb.
For speed. Use pre-cut lamb shoulder, hot stock and a wide pan. The lamb cooks faster and the rice reaches the right moisture level more quickly.
For the ultimate finish. Bake in a heavy earthenware or ceramic dish when available. Tavë kosi is deeply associated with home cooking and hospitality in Elbasan and central Albania.
