Authentic Mexican Huevos Rancheros Recipe

Huevos Rancheros is a classic Mexican breakfast that can happily be eaten morning, even noon or night. Huevos rancheros (Spanish pronunciation: [ˈweβoz ranˈtʃeɾos], "rancher's eggs") is a popular breakfast dish consisting of eggs served in the style of the traditional large mid-morning fare on rural Mexican farms. 

The basic dish consists of fried eggs served upon lightly fried corn tortillas topped with a tomato-chili sauce. Refried beans, Mexican-style rice, and slices of avocado (Avocado Benefits: Top 10 Health Benefits of Eating Avocado)
or guacamole are common accompaniments.


Preparation time: 10 minutes
Total time: 45 minutes

Serves 4

INGREDIENTS:

6 large potatoes, peeled and sliced inch thick 
1 onion, thinly sliced 
2 garlic cloves, minced 
2 tablespoons extra-virgin olive oil 
Salt and freshly ground black pepper 
2 cups Refried Black Beans or Refried Pinto Beans or canned instant fat free refried black beans 
8 large eggs 
2 tablespoons water 
2 roasted jalapenos, finely chopped 
4 large flour tortillas 
1- 1/3 cup grated low-fat Cheddar cheese 
1 cup homemade or store-bought salsa, or Ranchera sauce
Chopped scallions, for garnish (optional)

For the ranchera sauce:

2 cans (8 oz. each) tomato sauce
2-3 whole pickled jalapeno peppers
1/2 medium onion
2 cloves minced fresh garlic 
1 tbsp. canola oil
1/4 tsp. ground cumin
Salt
Ground black pepper


COOKING PROCEDURE:

1) Preheat the oven to 450 degrees. 

2) Spray a large baking dish with nonstick cooking spray. 

3) Combine the potatoes, onion, and garlic in the baking dish. Drizzle with the oil and sprinkle with salt and pepper. Toss to coat. 

4) Roast in the oven until the potatoes are golden, tossing occasionally, about 30 minutes. During the last 15 minutes of roasting, place the beans in a covered dish in the oven and heat through. 

5) Turn off the heat, let the oven cool slightly, and place 4 large dinner plates in the oven to preheat.

6) Meanwhile, beat the eggs with the water. Stir in the jalapeños and salt to taste. 

7) Spray a large skillet with nonstick cooking spray. Heat over medium heat. 

8) Add the eggs and cook, stirring constantly, until the eggs are set, about 2 minutes.

9) To assemble the tortillas, briefly heat both sides of a tortilla over a gas burner or in a dry skillet over medium-high heat until softened. Place on a preheated plate. 

10) Sprinkle cup of the cheese on the tortilla, spread of the beans on top. 

11) Cover with of the eggs, then top with a saddle of salsa or Ranchera sauce. 

12) Arrange a ring of potatoes around the outer edges of the tortilla. 

13) Garnish with a sprinkling of scallions, if desired. 

14) Return the plate to the oven and repeat with the remaining plates and ingredients. 

15) Serve when all the plates have been assembled. You can serve it with boiled rice if you prefer.


For the ranchera sauce:

1) In bowl of food processor, add onion, jalapeño peppers and garlic. Process until smooth, about 2 minutes.

2) Heat canola oil in medium skillet over medium-high heat.

3) Add pureed onion mixture and cumin. 

4) Cook until mixture turns light golden brown and fragrant, stirring occasionally, about 5 minutes. 

5) Stir in tomato sauce and 1 cup water and bring to boil. 

6) Cook until sauce thickens, stirring occasionally, about 15 minutes more; season with salt and ground black pepper.

7) Keep warm until you add it to the main dish.


Quick Cooking Tips and Tricks:

If concerned about salmonella, you may want to fully cook the egg yolks.

Make-ahead the ranchera sauce ahead of time will shave 25 minutes off the total cooking time of this recipe, saving you valuable minutes during a hectic mid-week dinner. 

To store pre-made sauce (or any leftover sauce), transfer to air-tight storage container in the refrigerator for up to 5 days or in the freezer for up to 3 months.
