Pulled Pork Parfait Original Recipe at Miller Park

It’s like an ice cream sundae, but instead of ice cream, there’s just barbecue pulled pork,cheese, BBQ sauce and mashed potatoes.


Serves 10-12


INGREDIENTS:


1 pork butt (8-12 lbs)

½ c All-South Barbecue Rub
1 c barbecue sauce of your choice
10 large white potatoes
4 tbsp butter
Salt & pepper to taste


DIRECTIONS:


Pork:

1) Apply dry rub to the meat liberally. 

2) In a smoker, cook the seasoned meat until the internal temperature of the meat reaches 190-195 degrees F, somewhere between 10-12 hours. 


3) Remove the cooked butt from the smoker and allow it to settle for an hour in a roasting pan. This will allow you to preserve the au jus, or natural juices, from the meat. 


4) Remove the bone with a simple quarter turn and a pull, then discard it. The bone should come out very easily if the meat is cooked. If it doesn’t come out easily, that means the meat is under-cooked. With a fork in each hand, begin to pull the meat apart until completely pulled. 


5) Add sauce.



Potatoes:

1) Wash and peel potatoes, cut into quarters. 

2) Add potatoes to a large pot of water and bring to a boil. Remove potatoes when they are fork-tender. 


3) Mash with a potato masher until you have a smooth consistency. 


4) Add butter, salt and white pepper.



How to Serve


1) Get all your ingredients together. Make sure that the mashed taters and pulled pork are hot before assembling.


2) Serve layered in a martini glass, champagne glass or plain old water glass. Start with pulled pork on the bottom, barbecue sauce and a scoop of mashed potatoes. 


3) Repeat the layers, adding some more BBQ sauce, pulled pork and mashed potatoes. Try to have that last scoop of taters resemble a scoop of ice cream as you can see in the photo above. It makes it totally look like a sundae.


4) Repeat until glass is full.


5) Finally top with more pulled pork, and some BBQ sauce. Stick a pickle spear in the side and it is ready to be served. This is a great idea for a picnic, party and also for game day or a tailgate event. Not only is it fun, but it taste delicious.
