Barbecued Bologna
1 3-pound stick of bologna
1 cup All-SouthBarbecue Rub
2 cups Basic All-American Barbecue Sauce
1 loaf cheap white bread
1. Rub the bologna all over with the Barbecue Rub.
2. Build a very low fire on one side of your covered grill. Place
the bologna on the side opposite the fire, cover, and allow it to
smoke slowly for 1 hour.
3. Remove the bologna
from the grill and slice it into ½-inch slices. Smear each slice with a little
sauce, slap it between two slices of bread, and enjoy a new barbecue classic. I
don’t want to ignore the cutting edge of new barbecue, so here
is the latest example of a lowly piece of meat turned into a delicious, if
rather unusual, delight. The weird consistency of bologna soaks up smoke like a
sponge and makes it taste great. Stranger than fiction. Personally, I like my
barbecued bologna sandwich with coleslaw and plenty of hot sauce.
