Barbecue Rub, Barbecue Sauce and Coleslaw Recipe



All-South Barbecue Rub

2 tablespoons salt
2 tablespoons sugar
2 tablespoons brown sugar
2 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons freshly cracked black pepper
1 tablespoon cayenne pepper
4 tablespoons paprika

All you do is throw them together and mix them well.

About 1 cup



Eastern North Carolina—Style Barbecue Sauce

1 cup white vinegar
1 cup cider vinegar
1 tablespoon sugar
1 tablespoon crushed red pepper flakes
1 tablespoon Tabasco sauce

Salt and freshly cracked black pepper to taste

Once again, folks, just mix ’em together. Keeps 2 months, covered.

About 2 cups



Tidewater Coleslaw

1½ cups commercial mayonnaise
½ cup white vinegar
1/3 cup sugar
1 tablespoon celery seed

Salt and freshly cracked black pepper to taste

1 head green cabbage, finely shredded
2 carrots, finely grated


1. In a small bowl, blend the mayonnaise, vinegar, sugar, celery seed, and salt and pepper to taste, and mix well.

2. In a large bowl, combine the cabbage and carrots. Pour the dressing over the mixture and blend well. Refrigerate until serving time.

About 2½ cups
